The Cows

High quality Brown Swiss cows' milk is used exclusively and sourced fresh from a local farm at Singleton. The milk is delivered direct to our factory and we pasteurise the milk at the start of the cheesemaking process.

Hunter Belle Cheese is the only cheese producer in Australia exclusively using Brown Swiss cows' milk, a dairy breed developed in the Swiss Alps that was used specifically for cheesemaking.

The Brown Swiss milk has an ideal protein to fat ratio that makes it excellent for cheese production and there is no need for us to add any extra cream for cheesemaking.

The Brown Swiss breed is renowned for its docile temperament, strength and heat tolerance along with its high volumes of high protein milk.
